This what I really like. Breakfast. Lunch. Dinner.
Tofu (200 grams) , ginger (a chunk of c.a 1 cm, finely chopped), garlics (2-3, finely chopped), Spanish onion (a half of) shallots (lots of, finely chopped), eggs (2 or 3, nicely beat), edamame (a handful of), salt, pepper and olive oil. .
Heat up olive oil. Ginger, garlic, onion: let them join and produce nice fragrance. Let tofu in, stir fry until it turns to nice brown color, then eggs in together with salt and pepper.Stir them together gently, then edamame in. Last but not least: shallot and turn off the heat.
To be honest, I don’t like salt. I prefer to sprinkle cheese before I serve it. But salt is okay.
